1 c. gluten free flour
60 g ground almonds
2 tsp baking powder
1 tsp cinnamon
1 Tbsp vanilla extract
1/4 c coconut oil, liquified
1/3 c. honey or agave syrup
1/2 c. raisins or cacao nibs or other fruit
50 g chopped nuts
Mix well flour, baking powder, cinnamon and ground almonds in a bowl.
In separate bowl, mix liquid coconut oil (cooled), honey or agave and vanilla extract.
Combine wet and dry bowls together well till forms cookie dough consistency.
Mix in raisins and nuts (or cacao nibs or other fruit).
Take a scoop of mixture and make into a ball with hands then place on a well greased tray flattening slightly.
Bake at 160 degrees for 10-12 minutes on the middle shelf. Check often to make sure and not burn them.
Let cool then enjoy!
